Delicious Chocolate Cake and REAL Strawberry Frosting

I made this combo for my kid's teachers for Valentine's Day and called them "Chocolate covered strawberry cupcakes". The combination was delish and light and a little different.  They went over really well!

Here's how to make the cupcakes:
1 1/2 cup all-purpose flour 
1 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
eggs, room temp
1 cup sugar
1 cup brown sugar
2/3 cup vegetable oil
4 tsp vanilla
1 cup buttermilk, room temp

Pre-heat oven to 350

Combine dry ingredients in a bowl and set aside. Cream eggs, oil, vanilla and sugars together until smooth. Slowly add to dry ingredients alternating with buttermilk until all ingredients are just combined. 

Fill cupcake liners halfway.  Bake 18-21 min or until inserted toothpick comes out clean. Makes 24. 

Strawberry Frosting
2 cups freeze-dried strawberries (I found them in the granola section of Kroger), ground up in a food processor until they reach a fine consistency. 
2 cups butter room temp
7 1/2 cups confectioners' sugar
6-7 tbls heavy cream
1 tsp vanilla 

Combine sugar and strawberries.  Slowly mix in butter, adding a tablespoon of cream as needed, add vanilla.  Continue to add cream until frosting gets to a good spreading or piping texture. 

Makes en0ugh to frost 24 cupcakes.
