Blueberry Scones

Sadly I don't have a photo of these, so you'll just have to imagine scrumptious looking blueberry scones.  I'm trying to stay in the habit of adding my favorite recipes to my own blog so that they will be there when I want to make them again and not on a website that is not longer around, which has happened to me before.

So enjoy this photo that has nothing to do with the blueberry scones but DO make the blueberry scones.

A side note, if you are using frozen berries, keep them frozen until you mix them in. Do not defrost them to add in, it will make the dough way too wet to roll out in any sort of way at all. :/

Blueberry Scones (recipe via King Arthur Flour)

2 cups all purpose flour
1/2 tsp salt
1/4 cup of sugar
1 tbls baking powder
6 tbls of cold butter cut into pieces
2 eggs beaten
1/3 cup yogurt, plain or vanilla
1/2 tsp vanilla
1 tbls lemon zest
1 cup of blueberries fresh or frozen
2 tbls melted butter
2 tbls sugar

Preheat oven to 375
Combine dry ingredients.  Add in butter with hands to combine.

In a separate bowl combine eggs, yogurt, vanilla and zest. Add to dry ingredients, stir until combined.  Add in berries.

Generously flour countertop and place dough on top.  Pat out dough into a 1in thick rectangle and cut into 10 triangles. Move each to a well greased cookie sheet. Brush with the melted butter and sprinkle with sugar. Bake for 20 minutes or until lightly browned and a toothpick, inserted, comes out clean.
