Brown Butter Cookies

Brown butter is one of my FAVORITE cooking smells ever.  If that aroma is part of the cooking process, you know the result will be amazing. In fact, I always say that if I ever opened a bakery or cafe, it would be called "Brown Butter".  So this is love.  I had high hopes for these cookies from Sally's Baking blog.

The results did not disappoint. The cookies have a rich deep flavor that reminds you of caramel or toffee.  They are amazing and totally different from any other cookie I have had. :)

Here's how I made them (a little different from hers)

Brown Butter Cookies
Two sticks of browned butter cooled a bit
2 cups and 2 tbl of All Purpose flour
1 tsp baking soda
1/2tsp of salt
3/4 cup sugar
3/4 brown sugar (I always use dark brown sugar)
1 egg
2 tsp vanilla

Combine flour, baking soda and salt in a separate bowl. Combine butter and sugars in a large bowl, mixing with a mixer.  Add in egg and vanilla.  Slowly add in flour and mix until well combined.

Using a 1 inch cookie scoop, scoop the cookie dough, dab into sprinkles and place on a cookie sheet that will fit in your refrigerator. (see below for photos of that. This method works with any kind of cookies you *have* to roll, which I hate doing.)   Refrigerate for about 30 minutes then place 12 to a standard cookie sheet and bake at 350 for about 12 minutes until edges brown. 

 Start with a 1 inch cookie scoop..
 ...overfill it when you do. 
 ...round it off.  Kind of "completing" the ball...
 ...dab into the sprinkles.... so....
...use the pop it out and onto the pan.  This also worked great with Chocolate Crinkle cookies...
