Brown Sugar Pound Cake

Lord have mercy.  This cake is simple and AMAZING.  Don't let the name "pound cake" fool you, this cake stands on it's own, in fact, after trying it, my soon to be 11 year old asked for it to be his birthday cake.  This is a perfect recipe with a unique flavor that you will LOVE.  I promise.  Have I ever lied to you? 


Brown Sugar Pound Cake
2 and 1/2 sticks butter, room temp
2 cups brown sugar light or dark.  Both are lovely
1 cup sugar
5 eggs room temp
1 tsp vanilla 
3 cups all purpose flour
1 tsp baking powder
1 cup milk
1/2 stick butter
1/2 cup brown sugar
1/4 cup milk
1 tsp vanilla
2 cups powdered sugar

Preheat the oven to 350.  Grease a bundt pan or two nine inch rounds.

Cream together butter, brown sugar and sugar using an electric mixer. Beat in the eggs and vanilla extract. Gradually add the flour and baking powder, add in milk.  Combine until well incorporated. 

Pour into pans.  Bake bundt pan for up to an hour, checking often towards the end.  If you bake in nine inch rounds or even a 9 by 13 pan, your baking time will be closer to 30-40 minutes.  Cakes are done when the middle no longer jiggles and the edges of the cake come away from the pan. 

Allow to cool for a few minutes and then flip onto platters or plates for serving. Cool completely before glazing. 

To make glaze:  In a pot, bring butter, brown sugar and milk to a boil.  Stirring constantly allow to boil for approximately two minutes. Remove from heat.  Whisk in vanilla and powdered sugar until combined.  Pour over cake, dividing between two cakes if you need to. 

Glaze will harden to a delish texture. You will want to make a pot of coffee and serve this to the people you love the most!
