Apple Cinnamon Honey Cake

A friend brought me some apples from her yard last week so I was on the hunt for a new apple kind of recipe to try.  Something that wasn't a pie or your usual expected apple dessert.  I am being dragged kicking and screaming into fall and I thought this would help.  It didn't but alas, we at least have a lovely end of summer dessert to show for it, right?


Apple Cinnamon Honey Cake

You'll need:
1 cup flour
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1 1/3 cups sugar
2 eggs
1 stick of butter melted
2 teaspoons vanilla
1 teaspoon ground cinnamon
Juice of 1/2 lemon or equivalent juice (I keep a bottle in the fridge)
4 apples
honey to drizzle


Preheat the oven to 375 degrees F. Spray 8 by 8 pan and line with parchment paper. 

Combine flour, baking powder, 1 cup sugar and salt. 
Add eggs, butter and vanilla. Add batter to pan. 

Peel, core and slice apples, covering with lemon juice as you go. 
Add cinnamon and sugar to apples and toss to coat. Add apple slices to batter, arranging in rows for a pretty look.  

Bake for 30-40 minutes until center is set.  Allow to cool for a few minutes and drizzle lightly with honey. 

I then added a simple powdered sugar frosting.  A cup of powdered sugar, a tsp of vanilla and enough water or milk to make it drizzle! But this part is totally optional. 
Perfect with a cup of coffee!
