Grandma's Blueberry Pie {super easy and YUMMY!}
On a recent trip to NJ Aaron discovered that this pie, made by mother in law, was his most favorite dessert ever. It's light and fresh and easy to make! I've made two since we got home and took one to a pot luck where it was a huge hit! I thought you might like and it and as I have learned, if I don't blog a recipe, I lose it!
So while those blueberries are still cheap and summer is still ours...make one of these for your family!
Grandma's Blueberry Pie
1 cup of sugar
4 Tbsp of flour
1 cup of water
¼ tsp of salt
2 pints of blueberries washed
1 graham cracker crust pie shell
Combine sugar, flour and water along with one cup of blueberries. Bring to a boil and simmer until the liquid become thick and purple, five to ten minutes.
Put the remaining berries in the bottom of the shell. Pour hot liquid over fresh berries. Tap shell to settle liquid in.
Chill until cold and serve with whipped cream or ice cream.
Acceptable as breakfast.
