We were snowed in this past weekend, nothing like a few days of forced retreat to give you a good reason to try out some recipes. I'm happy to say that this one was a winner (with a few modifications of course!).
If you are looking for a good, easy, no-knead bread recipe, this is it!
I like to start by running hot water over my mixing bowl to take the chill off of it.
1 teaspoon
sugar
1
package dry yeast
1/4 cups
warm water (same temperature that you would give a baby!)
1 cup warm water
3 cups
all-purpose flour
1 1/4 teaspoons
salt
Dissolve sugar and yeast in 1/4 cup warm water in your warmed mixer bowl with the dough hook attachment; let stand 5 minutes.
Add flour, water and salt. Mix on med speed until dough is smooth and elastic.
Place dough in a greased bowl, cover with a clean towel and place in a warm place for 45 minute or until doubled in size. Punch down, let rise another 30 minutes. Punch down, let rise 10 minutes.
Roll out into a 7 by 14in or so rectangle and then roll up starting from the 7in side.
Place seam side down, into an 8 x 4-inch loaf pan coated with cooking spray.
Cover and let rise 30 minutes or until doubled in size.
Preheat oven to 425°.
Uncover dough; gently brush with a beaten egg. Bake at 425° for 12 minutes. Reduce oven temperature to 350°; bake an additional 15 minutes or until loaf sounds hollow.
That's it! This bread is great for slicing and eating as is or for a sandwich!
