This meal was a winner! Tasty and filling! The perfect "breakfast for dinner" sort of thing and it comes together easily with common, simple ingredients. Once again, I had to blog it to make sure I could find it again because we will be making it again! :) I hope your family enjoys it as much as mine did!

Here's the recipe:
Breakfast Enchiladas
1 lb breakfast sausage
1 medium red pepper, chopped
1 small onion, chopped
½ cups green onions, chopped
2-½ cups shredded sharp cheddar (or preferred cheese)
10 whole tortillas
2 cups Half-and-half
6 eggs
1 Tbl flour
Directions:
In a large pan, cook the sausage, peppers and onions together until the sausage is done. Drain if needed. Combine this mixture with green onions and two cups of cheese. Add 1/3 cup of this mixture to each tortilla and roll up and place seam side down in a 9 x 13 inch baking dish. Repeat for all.
Whisk together half-and-half, eggs and flour. Pour over filled tortillas. Cover and let sit overnight.
When ready to cook preheat oven to 350ºF.
Bake, covered, for 30-40 minutes, or until eggs are set. Uncover, sprinkle with remaining cheese and bake for ten more minutes or until cheese is melted.
