what I made for Monday {easy banana nut bread}

This week I went with easy! :) I had a stash of very ripe bananas and almost all of the ingredients in my pantry! I don't like my banana bread to be overly moist so I only used two bananas per recipe, add another banana if you like yours to be more moist! :) Easy Banana Nut Muffins!
2-3 bananas (2 if you like a less moist bread and 3 if you like it very moist)
1 cup of sugar
2 eggs
1/2 cup veggie oil
2 cups of flour
1 tsp baking soda
1/2tsp of salt
1-2 cups of chopped walnuts *more or less depending on your taste!
1 cup mini chocolate chips *more or less depending on your taste!
Preheat oven to 350. I threw the bananas into the my kitchen aid while I gathered the other ingredients. Once the bananas were well mushed I added each ingredient in order, adding the next one as they became well blended, adding the nuts and chips at the very end.
Using a cookie scoop I filled each cupcake paper 2/3 the way up and then baked them for 18-20 minutes, until the tops were becoming golden brown.
Enjoy! They were great for breakfast and well loved by Doug's employees! And begrudged by those who didn't get any! :)
