Tasty Yule Log Cake (Good for Any Season!)

I know it's not Christmas anymore, but really, this cake could be cuted up for any season. It was so creamy and yummy, like a hoho cake but MUCH better and fresher tasting.  I cut one long one into two portions to take to two parties and there was plenty at both places. Make one for spring time!!

Yule Log Cake
cake:
1/2 cup cocoa powder *unsweetened
1/4 cup all purpose flour
1/2 tsp baking powder
6 eggs separated
1/4tsp cream of tartar
pinch of salt
3/4 cup sugar
1/2tsp vanilla
3tbl powdered sugar

Filling/frosting:
2 oz unsweet baking choc
8oz package of cream cheese
6tbl butter room temp
16oz powdered sugar
1tsp vanilla
3/4cup heavy cream

Mushrooms:
regular sized marshmallows
rolos

Make cake:
  1. Heat oven to 375. Coat a 15 x 10 x 1-inch baking pan with cooking spray. Line pan with parchment paper and coat paper with spray. 
  2. Whisk cocoa powder, flour and baking powder together. In a large bowl, whip egg whites, cream of tartar and salt until froth. Beat egg yolks,  1/2 cup sugar and the vanilla until pale and thick, about 4 minutes. Fold egg yolk mixture into whipped egg whites. Fold in flour mixture in 2 batches. Spread into prepared pan. Bake at 375 degrees for 12 to 14 minutes, until cake pulls away from the sides of the pan.
  3. Dust powdered sugar onto top of cake. Roll up cake in paper, starting from a short side if making one, length ways to make two. Allow to cool.
    Make filling/frosting:When cake is cool, melt chocolate according to directions on package.  Beat cream cheese and butter together. Slowly beat in powdered sugar and vanilla. Spoon 1 1/2 cups of the cream cheese mixture into a medium bowl. Beat 1/2 cup of the heavy cream until medium soft peaks form. Fold into first bowl of cream cheese mixture to lighten. Beat melted chocolate, salt and remaining 1/4 cup heavy cream into second bowl of mixture.
    Carefully unroll cake. Spread cream cheese filling onto cake. Re-roll and place on platter. Spread frosting onto the surface using a fork to create woodgrain effect. 
    To create 'knot' on side of cake, place 3 marshmallows in a tight cluster on one side. Cover with frosting, swirling decoratively. Add Candy Mushrooms to platter, if using
    Make mushrooms:cut marshmallows in half to make two circles (use kitchen scissors), place an unwrapped rolo on sticky side, place wherever makes you happy on the cake.
