Creamy White Chicken Chili (In the Crockpot!)


This recipe was a hit! As always, I tried to make it a bit better for you by removing some things and adding others.  The result was a chili we were happy to eat all week! We topped it with tortilla chips and mozzarella cheese! :) 

Creamy White Chicken Chili
2 diced onions
1 tbl minced garlic
2-3 chicken breasts cooked and shredded
32oz chicken broth
2 cans of great northern beans (as is, no draining or rinsing)
3 cans green chiles (the bitty 4 oz cans)
2 tsp salt
1 tsp pepper
2 tsp cumin
2 tsp oregano
1/2 tsp cayenne pepper
1 tsp chili powder

8 oz cream cheese softened 
1 cup heavy cream

Soften onions and garlic in a frying pan with a little oil. Add them and all of the ingredients except the cream cheese and heavy cream to the crock pot.  Allow to cook on low all day or on high for half the day.  About 20 minutes before you are ready to eat, add the cream cheese and heavy cream, stir to combine. 

That's it! Easy, simple and yummy!!
