Monday Treats (Apple Cinnamon Oatmeal Cookies) and a Free Printable!

Good morning friends!  Here's what went out to teachers this week! Sometimes simple is better, don't you think? And you can't go wrong with a lunch bag, super cute and simple without being expensive which is important if you're in it for the long haul! I did put the cookies in a plastic bag first but that was only because I didn't want the bags to get marked up with cookie oil/moisture.
I even labeled them this week! Here's hoping it's a sign of my productivity because I am seriously drowning in "to-do"s.
These cookies have the texture of a good muffin and are full of healthy things like oats and apples! I think a good addition would have been caramel chips but I didn't think of that in time.

If you'd like to make some, they are simple and come together with everyday ingredients.  Use a cookie scoop for consistent sizes! Here's one I use from Amazon.

Apple Cinnamon Oatmeal Cookies

1 cup all-purpose flour
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon baking soda
¼ teaspoon salt
½ cup room temp butter
½ cup brown sugar
¼ cup sugar
1 egg
1 teaspoon vanilla
1¾ cup old-fashioned rolled oats
1 diced apples (the size of your fist)

Fun add ins would be walnuts (about a cup) and caramel chips (a cup or more)

Preheat oven to 350. 

Combine dry ingredients, set aside. Cream together butter and sugars until fluffy.  Add in egg and mix until well incorporated.  Add vanilla, combine.  Slowly add dry ingredients to wet and stir until fully mixed.  Stir in oats, apples and any add ins of your choice

Scoop onto cookie sheets (you should fit 12 on a pan) and bake for 13 minutes. Allow to cool for a minute or two and then transfer to a wire rack.

P.S. My preferred method of printing these is to drag it to a word file, resize it to a size that works for me and tile it on the page and print that way onto cardstock.
