Cappuchino Chip Muffins and a Free Printable!

I made these for church and teachers this week! I thought the teachers especially could use a boost of caffeine this second week of school! The taste is just perfect (as far as I am concerned). A light coffee flavor mixed with some coffee.  Fine me on Instagram to see how I package these for teachers using the printable at the bottom of this page! 


Cappuccino Chip Muffins
2 sticks of butter room temp
1 cup of sugar plus extra for sprinkling
4 tablespoons of espresso powder (you can use instant coffee BUT the taste won't be as strong) plus extra for sprinkling
2 eggs
2 cups of half and half
2 tbl of vanilla extract
4 cups of all purpose flour
5 tsp of baking powder
1 bag of mini chocolate chips (about 2 cups)

Line muffin tins with paper liners.  This recipe will make about 30 muffins but is easily halved if that works better for you.  Preheat oven to 375.

Cream together butter, sugar and espresso.  Add in eggs, combine until mixed through.  Add half and half and vanilla, combine until smooth.

Add the baking powder to the flour, then slowly add that combo to the butter/egg/half and half mixture.

Once well incorporated mix in chocolate chips.

Fill muffin tins 3/4 of the way full.  Sprinkle tops with a little sugar and espresso powder.

Bake for 18-20 minutes.  Allow to cool in pans.

My preferred method of printing these is to drag it to a word file, resize it to a size that works for me and tile it on the page and print that way onto cardstock.
