Lavender and Mint Shortbread Cookies

Recently a friend gifted me some food grade lavender and since I've always wanted to try a lavender recipe and LOVE shortbread, this seemed like the perfect place to start!  These cookies are light and fresh and seem to get better the older they are!  The combination of ingredients is just lovely.  Recipe via 

Lavender and Mint Shortbread Cookies.
1 1/2 cups of butter, room temp
2/3 cup of sugar
1/4 cup powdered sugar
2 tablespoons dried lavender, coarsely chopped
1 tablespoon chopped mint leaves, fresh
1 teaspoon lemon zest, fresh
2 1/2 cups flour
1/2 cup cornstarch
1/4 teaspoon salt

Combine flour, cornstarch and salt, set aside.  Cream together sugars and butter until light and fluffy.  Add in lavender, mind and zest.  Add flour mixture and mix until well combined.  Refrigerate until firm.

I rolled them into one and a half inch balls, pressed flat in my palms but you could roll these out (1/4in thick) and use cookie cutters to shape.

Bake at 325 for 18-20 minutes or until the edges/bottom start to become light brown.  Don't overcook!

Cool for several minutes on the sheet and transfer onto racks.
