{delicious} crockpot chicken bacon chowder

I made this this week, inspired by a few recipes I found online {most of them more complicated than necessary} and the day it was cooking was TORTURE!  It smelled SO good and it's easy enough to make as well!  And dinner that night did not disappoint, it was perfect for the frigid weather we have been having!  This WILL be a regular in our recipe repertoire!

Do yourself a favor and make this today!

Crockpot chicken bacon chowder
4 cloves worth of garlic (I found a tube of garlic at the grocery! Looks like toothpaste but makes easy work of garlic.)
1 bunch of green onions (chopped about 1/2c)
2 stalks of celery
8 oz mushrooms (your favorite variety.  I used baby bella)
1 med onion. chopped
4 Tbs. butter
2 cups chicken broth –divided
Combine the above ingredients and allow to cook on low for about an hour or until the contents are hot!  Then add the ingredients below, stir until cream cheese is fully "dissolved" and there are no lumps. 
1 lb. chicken breast cooked and cubed.
8 oz cream cheese
1 cup heavy cream
1 lb. bacon cooked and crumbled (I cook bacon in the oven!)
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. powdered thyme
Allow to cook on low for 4-6 hours or so, stirring occasionally.  
Enjoy!  This would be amazing with crusty bread or crackers. :)

Mmmm. Or served in bread bowls! Or spooned over cornbread muffin in a bowl...looks amazing! May have to make this this weekend...and the frito bars for dessert.
