easy and delish homemade pimiento cheese!

I first had pimiento cheese this past year and fell long and hard in love with it!  The kind I have been buying was from the grocery store deli and even though I had no complaints with it, I was excited to try this homemade version.  It did not disappoint.  Like many things, homemade is just better!  This recipe is creamy and delicious and the addition of the banana peppers just brings it to perfection!  Even my boys LOVED it!  It didn't last long! 

Delicious Pimiento Cheese!
3  ounces cream cheese (softened)
1  cup grated jack cheese
1  cup grated cheddar cheese
½  cup mayo
3  tablespoons mashed pimientos
¼  teaspoon salt
⅛  teaspoon garlic powder
Banana Peppers, coarsely chopped, as many as tastes good to you!
 
I blended together the cream cheese, mayo, salt and garlic powder with a rubber spatula, once that was combined well, I added the rest of the ingredients, making sure they were all combined well.  It was definitely better after sitting in the fridge for a while!  I like it with tortilla chips or crackers!

So glad you posted this. I LOVE pimento cheese, but rarely have it because I can't find it where I live. Plus, I love homemade more than store bought. Can't wait to try this!

I've been wanting to make my own pimiento for about two years now. I've had this recipe waiting to go and today was the day. I raced home on my lunch break and whipped it up! I added some bacon and without letting the ingredients merry, it tasted delicious!
I also splurged and spent $1.59 for kraut. Ever since, I read that Reuben dog recipe, I've wanted to give it a whirl.
