what i made for monday {jello frosting recipe}


Every once in a while I love to send cupcakes in for our weekly treat (if you are new here I send in treats once a week (every week) to my husbands coworkers and my boys teachers).  In general, I try to keep the desserts I send quick and simple but every so often a cupcake is needed.  Yesterday I was in the mood to try a new frosting recipe (partly because I didn't want to go to the store) so I scrounged around my pantry and discovered a box of Cherry Lemonade Jello! I had all the ingredients and in ten minutes I had enough frosting to generously frost over 36 cupcakes!

I was pleasantly surprised at the yummy texture and flavor, very light and airy!  I can't wait to grab a few more flavors to try! 

I used the frosting on my go-to cake recipe you can find
HERE.  Little bit funky's perfect cake recipe!

Jello Frosting (any flavor!)

3 ounce package of Jello (any flavor NOT sugar free)
2/3 cup sugar
1 egg white
1 teaspoon vanilla


Add everything to your bowl, begin mixing on HIGH and slowly add 1/2cup of boiling water.  Beat on high for about five minutes or so, scrap the bowl as needed.  I did this in my Kitchen Aid and it worked beautifully!

Is it very sweet? I'm surprised it adds sugar because there is so much in the jello mix already.
