what i made for Monday - Butterscotch Oatmeal Cookies! (super tasty cookies!)

I honestly wasn't sure about this mixture of tastes and textures because I am not a HUGE butterscotch fan, but these cookies surprised me!  They were a hit with the coworkers and teachers, too! :) I hope you love them as much as we did!  

Butterscotch Oatmeal Cookies!  
2 cups of flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup of butter (soft)
1/2 cup veg oil
1 cup brown sugar  
1 cup white sugar
2 eggs
2 cups quick oats
1 cup butterscotch chips

Preheat the oven to 350 degrees F.  Whisk together flour, baking powder, baking soda, and salt in a medium bowl. 

In a medium bowl, cream butter, oil, and sugars. Beat in eggs one at a time. Gradually stir in the flour mixture until well blended. Mix in oats and butterscotch chips. Using a cookie scoop, place on baking sheets 2-3 inches apart.  

Bake 10-11 minutes until edges begin to be golden brown.  Don't over-bake and allow the cookies to set up no the tray before moving to cooling rack.

Makes about 36 cookies to share with others! :) Enjoy!

Love the container, are those vinyl letters spelling out Team Johnsen? Also will be copying the idea of the chalk sticker to label contents. I have a question about mixing the dry ingredients first. Is this really necessary? What are the consequences if they are added one by one to the mix?
