what i made for monday {cinnamon roll bars & cream cheese frosting!}

These are one of my new favorites!  I love them so much I almost didn't want to share them, which is usually not a challenge for me, but these are SO good!!  Do yourself a favor, make up a holiday that's today {or tomorrow if you must} and make these to celebrate.  Or celebrate Tuesday.  Or your favorite tree.  Or any old thing really.  Just make them, ok?

{bars}
15 1/4 ounces vanilla cake mix
3 ounces vanilla pudding mix, (not the instant kind but the "cook & serve" kind
3/4 cup melted and cooled butter
1/2 cup brown sugar
2 eggs
1 tablespoon water
2 tablespoons cinnamon
 
{cream cheese frosting}
8 ounces cream cheese {room temp}
1/4 cup butter {room temp}
 5 cups powdered sugar

Combine all "bar" ingredients in a large bowl with a hand mixer, batter will be thick.  Grease a 9 by 12in (or so) pan.  Spread mixture into the pan. 

Bake at 350 for 28-32 minutes.  To test for done-ness you can gently jiggle the pan, if there is any wiggle in the middle cook for additional minute and check again.  You will also notice that the edges will pull away from the pan when done (this tip works for cakes and brownies too!)

Allow to cool a bit.  While waiting mix cream cheese and butter together with powdered sugar.  Spread on bars while still slightly warm. 

Cut into bars and remember that sharing is best.  Really it is.  Even if it means you have to share these!
