Easy Cracker Toffee
1 box of saltines
1 stick of butter
1 cup of brown sugar
1 bag of semi-sweet chocolate chips
Heat your oven up to 350. Line a baking sheet (with a rim) with either foil or parchment paper. Place a layer of crackers on the bottom of the sheet.
On the stove, melt a stick of butter over med-high, add brown sugar and stir. Continue to stir until the sugar and butter blend together. Bring to a low boil (keep stirring). You will want to do this until the sugar dissolves and no sugar crystals remain (you want it to have a smooth texture of and not a gritty one). You can test the gritty-ness by running a metal spoon through the mixture and up onto the side of the pot, you should not feel any crunch of sugar crystals. Once there are no more crystals and the mixture has begun to caramelize pour the mixture over the crackers. Try to spread it out and cover as many of the crackers as possible. Spread with a rubber spatula to cover all crackers.
Place the tray in the oven and cook for 5-8 minutes. Wait for the caramel mixture to bubble all across the pan. Once it bubbles, wait for 30 seconds and remove from the oven.
Sprinkle hot crackers with the bag of chocolate chips. Wait for them to melt and spread across covering the whole pan. Top with nuts or sprinkles if you would like!
Set in fridge. Once completely hard you can break it into small pieces and share!!
