Reasons to smile in December...

First off...this photo just makes me smile. :) Moses and I were making cookies yesterday afternoon...I turn around for a second, then turn back around to see him admiring himself in the reflection of the mixing bowl. Do you see how pleased he is to see himself? Michelle...does this remind you of anyone and a certain TV incident?
He mostly has a supervisory role when it comes to making cookies...he makes sure I add enough chocolate chips...
and that I don't let the cookies burn. :)

Here is what I consider the worlds best chocolate chip cookie recipe.
I will never make any other variation.

Soft and Chewy Chocolate Chip Cookies
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 cup packed light-brown sugar
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 cups (about 12 ounces) semisweet and/or milk chocolate chips

Directions

  1. Preheat oven to 350 degrees. In a small bowl, whisk together the flour and baking soda; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips.
  2. Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
  3. Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely. Store cookies in an airtight container at room temperature up to 1 week.
One more reason to smile today...Doug, Moses and I went to the post office this morning after my doctors appointment (glucola day...blech!). Two people ahead of me in line there was a man with long white hair, long white beard and a white mustache. Sound familiar? So we are there, the line is moving along nicely...when suddenly Moses notices this man ahead of us. Out of the blue and loud enough for anyone within a few people of us in line to hear Moses says "Santa...SEE him!"...he may or may not have pointed. Without a word Doug leaves the line and walks away with Moses. I am left there holding back tears and laughter. :)

hey crystal! didn't you post how to make those adorable tissue cozies awhile back? i wanted to make a couple for my mom for christmas since she always has a zillion of those little tissue packs floating around ... but i couldn't find the tutorial. if you could, could you post a link here or on my blog? thanks!!!
